We also focus on operating in a sustainable manner in our restaurant and catering.

We use as much local products as possible. Our chef Massimo Norbiato cooks exclusively biological, mainly vegetarian and with products that are mostly from Amsterdam and its surroundings. If a product cannot be found locally, we make sure it is still imported as sustainably as possible. Thus, our biologically certified coffee beans are purchased directly from farmers in Ethiopia.
We also use as little plastic as possible. We have several glass bottles of tap water on the bar by default with reusable cups and only use paper straws.
